Fodor's Review: Chef Gerard Prystasz, honorary French consul and former private chef to François Mitterrand, is one of the pioneers in Las Terrenas. For decades, he has been serving refined cuisine at this laid-back outpost at the far end of Playa Bonita. More classical than contemporary, what Francophone doesn’t love a Marseille boulibasse? New is the calorie-conscious Diet-Bio Menu. Fresh local fish meet their fancy French fate here; he handpicks the lobsters and sea crabs. Lunch can be taken at the beach palapa (there's Wi-Fi!), and candlelit dinners on the covered terrace; both have unobstructed ocean views. The backdrop is the white Hotel Atlantis that would fit in on a Greek isle.
