This institution has been in the same spot for more than 10 years. They pretty much made lower-end Surry Hills cool when it still had crackheads and prostitutes, and stamped their authority on the specialty coffee scene. They were one of the first to build a filter bar, which opened people’s eyes to single-origin coffee and made it approachable. Sit at table 14, which is closest to the takeaway bar. Dozens of people line up, loud music blares, and the baristas laugh and get involved in conversations. From here, you can watch the coffee veterans make a filter, V60 drip, or AeroPress right in front of you out of three or four single-origins.

Commonly referenced as the best coffee, this hole in the wall is worth swinging by, particularly if you're walking to Central Station. Reservoir is a buzzy little street too. Lots of ad agencies, designers, start-ups and tech companies are located in the area so it's got a bit of a vibe.
